After a year of playing in the Toyota Cup with the Sydney Roosters in 2008, Winterstein moved to Queensland and linked with the Brisbane Broncos where he made his NRL debut in round one of the 2009 season against the North Queensland Cowboys.

He scored on debut and finished his rookie year with 16 tries. 

Winterstein enjoyed a run of 31 straight appearances for Brisbane and totalled 47 overall in his two years with the club before signing a three-year contract with the Cowboys.

His outstanding form in 2010 gained him selection for New Zealand for their end-of-season Four Nations campaign but he did not play a game for the Kiwis.

He ran out nine times in an injury-hit first season with North Queensland where he switched from his usual wing spot to play in the centres.

Winterstein played in all 26 matches for the Cowboys in 2012, crossing for eight tries and signed a contract extension keeping him at the club for another three years.

In 2013, Winterstein was the Cowboys’ top try-scorer with 11 tries and he represented Samoa for the first time in a Test against Tonga before again lining up for the Pacific nation in the Rugby League World Cup.

Winterstein continued his form into 2014, scoring 15 tries for the Cowboys and represented Samoa in all three games of their impressive Four Nations campaign.

He gained his first appearance in the All Stars match in February 2015, lining up on the wing for the NRL All Stars in their defeat to the Indigenous All Stars. 

Winterstein was once again the Cowboys’ top try scorer in 2015, with his career high season tally of 16 tries making him seventh in the entire NRL for the Cowboys’ premiership year.

2016 was another solid year for the no-nonsense Winterstein – with 13 four-pointers, he finished the season as equal second-highest try-scorer for the club and had the third-highest running metres count, with 3189m, and extended his stay at the club for a further two seasons.

His 2017 season got off to an interrupted start with an ankle injury sustained in the pre-season trial against the Tigers and then a broken arm in the round 2 extra-time win over the Broncos.

Winterstein's consistency and longevity were rewarded with captaincy of the Samoa team in the Pacific Test Invitational against England in the 2017 Representative Round.
